The vineyard is located in Sant'Urbano, Apiro, in a beautiful valley on the border between the province of Macerata and Ancona, at about 400 meters a.s.l.

VINE VARIETY
The bunches are carefully selected, in the oldest part of the vineyard, harvested by hand and placed in boxes. In the cellar the stalks are removed from the grapes and subjected to cryomaceration for 48 hours to allow the must to extract as many aromas from the skins as possible and make the wines more full-bodied.
During racking, only the free-run must is extracted and it is subjected to cold “stabling” for 5 days at a temperature of 5 degrees. Fermentation takes place in refrigerated stainless steel tanks, the must is kept at a constant temperature of 14/16 degrees.
AGING
The wine is aged for about 24 months in steel tanks completely filled and blanketed with Argon or Nitrogen, and every 30 days it is worked with Batonnage.
The wine continues its aging in bottle for about another 12 months before marketing.

The bunches are carefully selected, in the youngest part of the vineyard, handpicked and placed in boxes. In the cellar the stalks are removed from the grapes and only the free-run must is extracted.
Fermentation takes place in refrigerated stainless steel tanks, the must is kept at a constant temperature of 14/16 degrees.
AGING
The wine is aged for about 12 months in stainless steel tanks completely filled and blanketed with Argon or Nitrogen, and is worked every 30 days with Batonnage.
The wine continues its aging in bottle for about another 12 months before marketing.
